After making this banana bread, I wasn’t sure if I could ever buy another slice at the store. This was not only the best banana bread I’ve MADE, but the best banana bread I’ve ever EATEN. Seriously, I would just skip to the recipe now and get started. And get back to this intro while it’s baking in the oven.

Okay, so now that your banana bread is baking in the oven, let me tell you what to expect.

  • It should be incredibly moist. You can even hear it as you cut yourself a slice. I like to slightly underbake mine (1 hour) so the middle is just set, but not uncooked.
  • The secret ingredient in this banana bread is the espresso powder. It adds a depth of flavor and color to the final product.
  • Your bread will not last long. Trust me. I wouldn’t necessarily recommend making two loaves to combat this, as that second loaf will also not last.
  • You can turn this banana bread into muffins. I used the exact same recipe, same oven temperature, and baked for 20-25 minutes. They turned out soft and moist as well.

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/3 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 1/2 cups mashed bananas
    (~4 bananas)
  • 2 eggs
  • 1/2 cup milk
  • 1 tsp vanilla
  • 1 tbsp instant espresso powder
  • 1 1/3 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 325ºF.
  2. In a large bowl, mix together the butter, brown sugar, and white sugar.
  3. Add in the mashed bananas, eggs, milk, vanilla, and espresso powder.
  4. In a separate medium bowl, combine the flour, baking soda, and salt.
  5. Fold the dry ingredients into the wet ingredients. Just before the flour is fully incorporated, add in the chocolate chips. Fold until just combined.
  6. Grease a 9×5 loaf pan and pour the batter in.
  7. Bake for 1 hour to 1 hour 15 minutes. You can check if the banana bread is done by inserting a toothpick and seeing if it comes out clean.
  8. Let cool for 20-30 minutes, if you can wait that long 😉
