Peanut Butter Chocolate Chip Energy Balls

As I was cleaning out my pantry, I found several jars of odds & ends ingredients. Chia seeds that I never touched, a leftover chocolate baking bar, nuts, oats. I’m a big fan of clearing out the food I have in my pantry before grocery shopping, so that’s how I thought of making these energy balls. They’re a breeze to make, healthy & delicious, and you can keep a batch in the fridge for when the snack cravings hit.

What can I add in?

Anything you want! This recipe is very forgiving, so you can substitute any ingredient. Almond butter for peanut butter, pecans instead of walnuts, etc. I just used what I had on hand, which is the beauty of these kitchen sink energy balls!

I like giving most of my ingredients at least a rough chop before mixing, so the texture of the energy balls is cohesive. Of course, you can customize this as you like, and skip this extra step as well.

Base Ingredients

  • 1 cup old-fashioned oats, roughly chopped

  • 1 tbsp chia seeds
  • 1/2 cup peanut butter
  • 2 tbsp maple syrup *

Add-in Toppings

Peanut Butter Chocolate Chip

  • 1/4 cup chopped peanuts
  • 1/2 cup dark chocolate chips

Trail Mix

  • 1/4 cup chopped nuts
  • 1/4 cup cranberries
  • 2 tbsp coconut flakes
  • 2 tbsp chopped seeds (I used sunflower and pumpkin seeds)

Double Chocolate Chip

  • 1/2 cup dark chocolate chips
  • 1 tbsp cocoa powder
  • more cocoa powder for dusting (optional)

Espresso Chocolate Chip

  • 1/2 cup dark chocolate chips
  • 2 tbsp espresso powder
  • 1 tbsp cocoa powder
  • more cocoa powder for dusting (optional)

Instructions

  1. Combine all ingredients in a bowl and mix well.
  2. Roll the mixture into 1-inch balls. If the mixture is too soft and not sticking together, chill in the fridge for 30 minutes before rolling.
  3. These last in the fridge for up to 1 week, in an airtight container. I love them straight from the fridge!
